Description
Yamaroku Shoyu is a soy sauce brewery on Shodoshima island in Japan that has run for about 150 years. It ferments all of its soy sauce in wooden cedar barrels of 3,000 to 6,000 litres, in a moromi building dating from the early Meiji period that is a registered national cultural property. Its products include Tsuru Shoyu, Kiku Shoyu, a ponzu and Kikutsuyu, a dashi soy sauce. The company offers brewery tours and runs a tea house. It also leads a project to revive wooden barrel craftsmanship.
