Description

Uplands Cheese is a family dairy farm in the Driftless Region of southwest Wisconsin that makes farmstead cheese on site. It makes two cheeses seasonally, Pleasant Ridge Reserve, an alpine-style cheese aged nine months or more, and Rush Creek Reserve, a soft-ripened autumn cheese. The herd of 150 cows grazes on 500 acres of pasture, and during the roughly 200-day grazing season the farm makes a single batch of cheese each day. Milk runs from the milking barn directly into the cheese vat, and the cheeses are aged in caves on the farm. The company ships its cheeses around the country and has a wholesale program.
