Mottolini is an Italian producer of bresaola, based in Poggiridenti in the Valtellina and operating since 1986. The family makes it by hand following traditional recipes, from selecting beef leg cuts to trimming, salting and spicing. Its range includes Bresaola della Valtellina IGP, Punta d'anca, carpaccio, Fiocco, Speck della Valtellina, Mocetta and Carne Secca delle Alpi Retiche. It also offers specialities made with Chianina or Fassona beef, an organic bresaola, a halal range and BRE-SALT, a low-salt bresaola.
