Moons Green Charcuterie is a British producer of saucisson, salami, chorizo and Beer Sticks, made by hand at Owley Farm in the Kentish Weald. It was founded by John Doig and Ian Jones and makes more than 20 varieties of saucisson using British ingredients wherever possible. Its air-dried meats include versions of prosciutto, loma, coppa and bresaola, as well as an English air-dried ham aged for 18 months. It also makes a Calabrian-style 'Nduja with a lower fat content, and it sources free range meat from nearby farms. The business sells directly to consumers and offers wholesale.
