Metzgerei Hess in Kehl is a master butcher business in its third generation. Fritz Hess senior founded it in 1935 together with the Wirtshaus Hirsch, and it passed to Fritz Hess junior in 1970 and to the present owner in 2002. About 80 percent of the range is produced fresh every day in its own sausage kitchen from old family recipes, so many permitted additives can be left out. The company works with regional farms, naming a pig farm in Willstätt and a beef supplier in Seelbach-Schuttertal, and says it pays up to 25 percent above the market price for pigs. It also runs a bakery section and a party service.
