Leaves Coffee is a Japanese specialty coffee roaster based in the Kuramae district of Tokyo. Its roastery, Leaves Coffee Roasters, started in January 2019 after the founder, Yasuo Ishii, opened a coffee shop in 2016, and it runs two production roasters, a Probat UG-15 and a Stronghold S7X. Its roasting aims to bring out sweetness and aroma with a balanced acidity. The roaster was named a Notable Roaster by Sprudge in 2021 and 2022 and its founder placed second at the 2025 Japan Brewers Cup. The company sells beans, subscriptions and brewing equipment, and offers wholesale.
