Kopernik — Fabryka Cukiernicza KOPERNIK S.A. is a confectionery factory in Toruń, Poland, that describes itself as the oldest producer of gingerbread and wafers in Poland. Its history goes back to 1763, when Jan Weese took over a gingerbread workshop. Its brands include Katarzynki, Toruńskie Pierniki, Wafel teatralny, Całuski and Bagatelka. In 1991 it became a joint-stock company owned by its employees. The company operates factory shops and, since 2015, the Toruń Gingerbread Museum, housed in its former 19th-century factory.
