Käserei Baldauf is the cheese business of Gebr. Baldauf GmbH & Co. KG in the Allgäu, founded in 1862 and owned by the Baldauf family for five generations. It began with the trade in Emmental cheese and in the 1920s grew into a producer with over 20 dairies. Today hard and semi-hard cheeses are made from hay milk in its village dairy in Hopfen and in a newer dairy in Goßholz. The range includes organic varieties and sliced cheese in 125 g packs for retail and the specialist trade.
