Golitsyn palace, Noviy Svit is the Novy Svet house of sparkling wine in Crimea, described as the oldest winemaking enterprise in the region. It was founded in 1878 by Prince Lev Golitsyn, who introduced the classic method of ageing on the lees in the bottle on an industrial scale in the Russian Empire. The aged range is matured at least 12 months on the lees, and the collection range at least 36 months. The house also owns vineyards and offers wine tours, including excursions with its chief winemaker.
