Ayasofya Lokum is an Istanbul-based maker of handmade Turkish delight in the Ottoman tradition, which draws on a palace recipe dating from 1777. It produces in a modern closed facility of more than 1,000 square metres in Çatalca, with a stated output of 5 tons a day of traditional craft lokum. The company says it uses 100% beet sugar, pistachios from Antep, rose water and lemon juice. Its collection includes pistachio, rose, plain classic and corporate gift assortments, and it sells online.
